granola cups

INGREDIENTS​

​BASE

  • 1 ripe banana, mashed (substitute with coconut oil for a crunchier texture)

  • 1½ CUPS/4oz rolled oats

  • ¼ CUPS/85g/3oz honey

  • 1 TEASPOON vanilla extract

  • 1 TEASPOON cinnamon (optional, but recommended)

  • pinch of salt

TOPPINGS

  • yogurt

  • fresh fruits (blueberries, strawberries, bananas, kiwis, mangoes, peaches)

  • honey

  • chocolate chips

  • peanutbutter

  • chocolate spread

STEPS

  1. PREHEAT THE OVEN TO 180ËšC/350ËšF.

  2. MIX ALL INGREDIENTS INTO A BOWL UNTIL WELL COMBINED.

  3. SCOOP 2 TABLESPOONS OF MIXTURE FOR EACH CUP IN WELL GREASED MUFFIN TIN OR SMALL OVEN-SAFE BOWL. PRESS THE MIXTURE DOWN FOR A BASE THEN ON THE SIDES TO MAKE A BOWL SHAPE.

  4. BAKE THE GRANOLA CUPS IN THE OVEN FOR 25-30 MINUTES. LET COOL FOR AT LEAST A 30 MINUTES.

  5. START FILLING IN YOUR FAVORITE TOPPINGS!
