INGREDIENTS

  • 180GRAMS/6OZ/1 big potato or 3 - 4 small potatoes, washed and patted dry

  • 2 TEASPOON (10ml) olive oil

  • a sprinkle of salt and pepper

  • 2 TABLESPOONS (30 ml) sour cream

  • 1/4 CUP crispy bacon bits or chopped vegetarian bacon 

  • 1 TEASPOON spring onion or chives, thinly sliced

  • A GENEROUS SPRINKLE of shredded cheese

STEPS

  1. PREHEAT OVEN TO 200°C/390°F.

  2. RUB OLIVE OIL OVER POTATO(ES).

  3. BAKE THEM ON THE TOP RACK OF THE OVEN FOR 20 MINUTES. THEN DROP TEMPERATURE DOWN TO 170°C/340°F FOR ABOUT 45 MINUTES.

  4. CUT ACROSS EACH POTATO AND SPRINKLE SALT AND PEPPER.

  5. STUFF THE POTATOES WITH SOUR CREAM, BACON BITS, SPRING ONIONS, AND SHREDDED CHEESE.
