fluffy pancakes 🥞

PREP TIME: 20 MINUTES

COOK TIME: 10 MINUTES

TOTAL TIME: 30 MINUTES

YIELDS: FOUR SERVINGS

INGREDIENTS​

  • 3/4 CUP (240ML) milk, whole fat milk 

  • 2 TABLESPOONS (60ML) white vinegar (or lemon juice, but white vinegar is recommended)

  • 1 CUP all-purpose flour

  • 1 AND ½ TABLESPOONS granulated sugar

  • 1 TEASPOON baking powder

  • ½ TEASPOON baking soda

  • ½ TEASPOON salt

  • 1 egg

  • 4 TABLESPOONS butter, melted (2 TABLESPOONS) and rest for the pan

  • TOPPINGS: fresh fruits (banana and berries), bacon, honey, chocolate sauce, cheese,

STEPS

  1. MAKE BUTTERMILK BY POURING WHITE VINEGAR AND MILK INTO A BOWL FOR 15 MINS.

  2. IN A BIG BOWL, POUR ALL-PURPOSE FLOUR, SUGAR, BAKING POWDER, BAKING SODA AND SALT (tip: use a sift to ensure there are no lumps!).

  3. POUR EGG AND MELTED BUTTER INTO BUTTERMILK MIXTURE AND MIX UNTIL WELL COMBINED.

  4. TURN HEAT ON TO MEDIUM AND PUT ½ TABLESPOON OF BUTTER INTO PAN.

  5. POUR BUTTERMILK MIXTURE INTO THE BIG BOWL AND STIR UNTIL LUMPS OF FLOUR ARE GONE (DO NOT OVER MIX, YOU’LL GET CAKE INSTEAD OF PANCAKES).

  6. SCOOP ¼ CUP OF BATTER INTO PAN

    7. WAIT FOR BUBBLES TO FORM (~2 MINS), FLIP PANCAKE OVER FOR 30 SECOND AND

SERVE!

tip #1: putting a teaspoon of chocolate spread in the middle of the pancake immediately and then a dollop of batter on top of it for a chocolate surprise ;)

tip #2: lay strips or diced pieces of bacon on top of the pancake immediately
