INGREDIENTS

½ head of cauliflower, cut into bite-sized flourettes

1-2 TABLESPOONS butter (vegetarian or vegan)

½ CUP cheddar cheese (vegan or any type of cheese you can find), shredded

a pinch of salt and pepper

2-3 TABLESPOONS milk (soy or oat etc.)

1 TEASPOON chili or cayenne powder (optional but recommended)

1 TEASPOON dijon mustard (optional but highly recommended)

1 TABLESPOON chives, chopped

STEPS

POUR CAULIFLOWER FLORETS INTO BOILING WATER FOR 5-7 MINUTES OR UNTIL YOUR FORK CAN PIERCE THROUGH.

WHILE THE FLORETS ARE COOKING, MELT THE BUTTER INSIDE A PAN ON MEDIUM-HIGH HEAT. STIR IN CHEESE, SALT, PEPPER, CHILI POWDER AND DIJON MUSTARD UNTIL A MIXTURE IS FORMED. THEN SLOWLY POUR IN THE MILK AND MIX UNTIL WELL COMBINED.

TURN THE HEAT DOWN TO MEDIUM-LOW AND POUR IN DRAIN FLORETS. TOSS THE FLORETS AROUND UNTIL TO COAT THEM WITH THE CHEESE MIXTURE.
