3.5 CUPS all purpose flour or wheat flour

1 TABLESPOON baking powder

1 TEASPOON cinnamon powder (optional)

1 CUP almonds, slivered almonds or chocolate chips (optional)
WET

1/2 CUP vegetable oil (e.g. sunflower oil) or melted butter

1 CUP granulated sugar
-
3 LARGE room temperature eggs
-
1 TABLESPOON MILK (optional)
-
1 TABLESPOON almond extract (optional)

STEPS

PREHEAT OVEN TO 190°C/375°F.

COMBINE THE FLOUR AND BAKING POWDER IN A BOWL.

IN A BIG BOWL, MIX ALL THE INGREDIENTS FROM THE "WET" INGREDIENTS LIST UNTIL WELL COMBINED.

STIR 1/3 OF THE FLOUR AND BAKING POWDER MIXTURE INTO THE WET MIXTURE. ONCE ALMOST COMPLETELY MIXED, POUR IN THE NEXT 1/3, AND CONTINUE UNTIL WELL COMBINED. ADD THE ALMOND AND/OR CHOCOLATE CHIPS IN.

DIVIDE THE DOUGH INTO 2 EQUAL PIECES ON A PARCHMENT PAPER ON A BAKING TRAY. ROLL THE DOUGH PIECES INTO LONG PIECES (TO THE EDGE OF THE BAKING TRAY) PARALLEL TO EACH OTHER. FLATTEN THE DOUGH DOWN TO ABOUT 1CM (½ INCH) THICK. MAKE SURE TO LEAVE ABOUT 1 CM BETWEEN THE DOUGH PIECES.

tip:​ divide the dough into 4 pieces to make more narrow doughs and therefore smaller cookies! Take 4 minutes off of the first time you put the dough into the oven and 2 minutes each side when you bake the cookies for the second time.

PUT THE TRAY IN THE OVEN TO BAKE FOR 25 MINUTES OR UNTIL GOLDEN BROWN.

TAKE THE TRAY OUT AND KEEP THE OVEN ON WHILE THE TWO LARGE, LONG BISCOTTI COOKIES COOL FOR 5 MINUTES. USE A SERRATED KNIFE OR A PIZZA CUTTER, SLOWLY CUT THE LARGE COOKIES INTO 1CM (½ INCH) WIDE SLICES.

FLIP THE SLICED COOKIES ON ONE OF THEIR CUT SIDES ONTO THE BAKING TRAY. YOU CAN PLACE THE COOKIES MUCH CLOSER TO EACH OTHER NOW (â…“ CM OR 0.15 INCH APART). BAKE FOR 6-8 MINUTES, FLIP THE COOKIES ONTO THE OTHER SIDE AND ANOTHER 6-8 MINUTES IN THE OVEN.

COOL THE BISCOTTIS ON A COOLING RACK FOR AT LEAST 30 MINUTES SO THEY CAN CRISP UP!

tip: melt some chocolate and dip one side of the cookies in or drizzle it all over the cookies. ​
