microwave jacket (sweet)potatoes

INGREDIENTS

BASE

  • 180GRAMS/6OZ/1 big or 3 - 4 small potato(es) or sweet potato(es) 

 

 

TOPPINGS

  • 2-3 TABLESPOONS sour cream

  • 1/4 CUP crispy bacon bits or chopped vegetarian bacon

  • 1 TEASPOON spring onion or chives

  • A GENEROUS SPRINKLE of shredded cheese

STEPS

  1. POKE AROUND THE POTATOES WITH A FORK (AROUND 4 POKES FOR SMALL POTATOES AND 6 FOR BIGGER POTATOES).

  2. PUT THE POTATO(ES) ON A MICROWAVE-SAFE PLATE AND MICROWAVE:

    • 3 MINUTES (900W) FOR SMALL POTATOES ​​

    • 3.5 MINUTES (900W) FOR BIG POTATOES

  3. FLIP THE POTATO(ES) OVER AND MICROWAVE AGAIN.

  4. LET THE POTATO(EST) SIT FOR A MINUTE. TEST THE POTATO(ES) BY PUSHING A KNIFE INTO THE CENTER, IF IT'S STILL HARD THEN MICROWAVE FOR ANOTHER MINUTE (900W).

  5. SPLIT POTATO(ES) IN HALF AND SLAB ON THE TOPPINGS, ENJOY WARM!

tip: choose potatoes that are high in starch content, that are better for baking (such as Maris Piper, Desiree and King Edward) instead of making mashed potatoes. Opt for sweet potatoes for more vitamins ;)

tip: make crispy bacon bits in the microwave by lining 2 layers of paper towel on the bottom and top of the bacon for 3-5 minutes on high (700-900W)
